Queen’s Cake


1 cup of rice flour
1/2 cup of Coconut Flour
1 -teaspoon baker’s yeast
1 cup (250ml) unsweetened almond drink
1 Orange (juice and zest)
1 Lemon (juice and zest)
2 tablespoons of honey
4 tablespoons of olive oil
2 whole eggs
Chopped dates and apricots (a full hand)
Hazelnuts and almonds (a full hand each)

First, add the dry ingredients, flours and dry fruits, like chopped dates, hazelnuts and almonds.
After, add the liquids, unsweetened almond drink, lemon and orange juice, honey, olive oil and eggs.
Mix everything and leave the dough to rest. Ideally, overnight so it can brew.
Put in oven in between 15 to 20 minutes at 180ºC.

137mg of Potassium.

Adjust the dry fruit quantities to taste. 
Is recommended to have a cake slice instead of a portion of fruit.
You can also use a tablespoon of Psilio tea mix with the almond drink for more elasticity and a fluffier dough.
